The Ale Apothecary Sahati
Sahati is a robust, rustic Saison that bridges Belgian farmhouse traditions with ancient Scandinavian techniques. The use of rye malt and barley provides a distinct spicy grain character, while the unique process of using a spruce kuurna and spruce branches imparts a deep, resinous evergreen essence and a sturdy woody structure. Sparing additions of Cascade hops contribute a delicate floral and citrus counterpoint to the high-intensity fermentation esters. At over 9% ABV, this beer presents a significant but well-integrated warmth, culminating in a signature dry, effervescent finish that remains complex and forest-forward, reflecting its unique woodland origins.
Appearance. Deep gold to pale orange (10-14 SRM); hazy and unfiltered appearance with a dense, rocky ivory head showing excellent retention and Belgian lacing.
Aroma. High intensity with a complex bouquet of peppery yeast phenols and citrusy esters; prominent resinous spruce needles and a spicy rye malt graininess are balanced by subtle floral notes from Cascade hops.
Taste. Initial impression of spicy rye and grainy malt, followed by a dominant resinous evergreen flavor and subtle wood tannins. Hop bitterness is moderate and firm, working alongside peppery fermentation notes and a light acidity. The finish is exceptionally dry, lingering with a clean, forest-like aftertaste.
Mouthfeel. Medium body with very high, effervescent carbonation; noticeable alcohol warmth is smooth and well-integrated. A light woody astringency adds structure to the palate.

Starting with a 200-year old Engelmann spruce tree felled on brewery property, we created our own kuurna (an ancient Scandinavian lauter tun) to separate the wort from the grain during brewing. The bottom of the kuurna is layered with spruce branches; the needles act as a natural filter and impart resinous oils into the wort. The hollowed-out trunk of the tree also contributes spruce essence and structure from the raw wood. The beer is made of barley & rye malts along with a sparing addition of Goschie Farms Cascade hops and is brewed just a few times per year.? SAHATI is in many ways the very definition of The Ale Apothecary, where complex flavors arrive from the very methods used for production…the result is the process impacts the flavor profile at least as much as the ingredients themselves.
