Earthbound Astronaut is a complex Brett Beer that showcases the rustic terroir of Central Oregon. Brewed with toasted Mecca Grade Estate Metolius malt, it presents a deep, biscuity backbone with layers of hazelnut and toasted crust. The Brettanomyces fermentation introduces a sophisticated bouquet of dried apricot, wild pineapple, and a subtle, earthy funk reminiscent of sun-bleached hay and leather. Despite its 8.4% ABV, the beer remains remarkably nimble, finishing bone-dry with a delicate, non-lactic tang. It is a masterful integration of toasted malt depth and wild yeast vibrancy, offering a harmonious balance between farmstead grit and artisanal elegance.
Appearance. Deep gold to amber-copper (SRM 10-14) with a slight, persistent haze. Features a thin but creamy off-white head with moderate retention and light lacing.
Aroma. High intensity. Robust toasted malt notes of biscuit and almond merge with complex Brettanomyces esters of overripe pineapple and stone fruit. Secondary notes include earthy funk, leather, and a hint of spicy clove.
Taste. Initial toasted malt sweetness gives way to a dry, complex profile. Flavors of bread crust and toasted grain from the Metolius malt are complemented by fruity esters of apricot and pear alongside a developing barnyard funk. Bitterness is low to moderate, but the beer feels crisp due to high attenuation. The finish is dry and lingering with a faint wood-like tannin.
Mouthfeel. Medium body with a light, effervescent carbonation that lifts the heavier malt flavors. A gentle alcohol warmth is present, well-integrated into a smooth, slightly creamy texture with no astringency.
