The Ale Apothecary Bottleworks 18th

Sour Ale 8.27 º
This complex Straight Sour Beer showcases a masterfully integrated profile of sharp acidity and agave-derived depth. Utilizing Mecca Grade malt as a sturdy cereal foundation, the wild and open fermentation yields a bright, lemony lactic sharpness characteristic of the style. The primary sensory narrative is driven by extended aging in Reposado and Anejo agave barrels, contributing sophisticated layers of earthy agave nectar, subtle smoky oak, and a whisper of vanilla. Despite its elevated strength, the natural carbonation from bottle fermentation maintains a lively, effervescent character that lifts the nuanced, barrel-aged complexity through a dry, bone-clean finish.
Appearance. Pours a pale gold with a slight haze (4-6 SRM). It features a large, frothy white head with moderate retention and vigorous effervescence visible in the glass.
Aroma. High intensity lactic sourness provides sharp notes of lemon and tart green apple. Beneath the acidity lies a distinct earthy agave character with hints of vanilla and toasted oak from the Reposado and Anejo barrels. Pale, bready Mecca Grade malt notes are present with no detectable hop aroma.
Taste. Clean, assertive lactic acidity dominates the initial impression, followed by a grainy, bready malt depth. Mid-palette reveals the influence of agave nectar and barrel aging, offering earthy, slightly spicy, and oaky nuances. There is no hop bitterness or flavor; the balance is firmly acidic and dry. The finish is crisp and lingering with a subtle agave sweetness and oak tannin.
Mouthfeel. Medium-light body with very high carbonation providing a prickly, effervescent texture. A noticeable but well-integrated alcohol warmth reflects the higher ABV, complemented by a sharp, mouth-watering acidity.
