This Grosse Fleur Saison presents a powerful, rustic interpretation of the farmhouse tradition, appropriately described as 'colossale.' At 7.5% ABV, it leads with an intense aromatic profile of cracked black pepper and pome fruit esters, notably pear and ripe apricot. The colossal stature is reflected in a robust grainy malt foundation that supports the high fermentation character without sacrificing the style's signature dryness. Continental hop notes of dried flowers and earth provide a grounded bitterness that cuts through the elevated strength. It is an effervescent, complex ale that balances the warmth of a strong beer with the highly attenuated, refreshing snap of a classic Saison.
Appearance.Deep gold to pale orange (approx. 8-10 SRM) with a slight, natural haze from being unfiltered. Topped by a dense, rocky, ivory-colored head with excellent retention and thick Belgian lacing.
Aroma.High intensity aromatic profile featuring spicy phenols reminiscent of black pepper and fruity esters of pear, apple, and stone fruit. Moderate grainy malt sweetness is present, complemented by low, earthy and floral hop notes and a hint of clean alcohol.
Taste.Initial grainy malt flavor is quickly overtaken by a complex interplay of peppery spice and citrusy esters. Firm bitterness is accentuated by very high attenuation, leading to a bone-dry, spicy, and lingering aftertaste that remains clean despite the beer's strength.
Mouthfeel.Medium body with very high, prickly carbonation that creates a lively, effervescent sensation. A gentle, well-integrated alcohol warmth is noticeable but smooth, lacking any harshness or astringency.
