This potent Double IPA represents a sophisticated collaboration, merging old-school muscle with modern aromatic depth. A robust hop profile led by Citra, Centennial, Simcoe, Cascade, and Columbus delivers a layered tapestry of resinous pine, classic grapefruit, and zesty citrus. The inclusion of Tropicalizer alongside a complex yeast blend elevates the profile with intense notes of overripe mango, passion fruit, and subtle stone fruit esters. Despite its 8.1% ABV, the beer maintains a clean, dry finish characteristic of the style, ensuring high drinkability. Assertive bitterness is balanced by a lean malt backbone and a lush, tropical-forward finish.
Appearance. Deep gold to light copper with a slight haze; features a moderate-sized, persistent, off-white head with excellent lacing.
Aroma. High intensity hop aroma featuring prominent grapefruit, pine, and resinous notes alongside tropical layers of mango and guava. A supportive, neutral grainy maltiness sits in the background with light fruity esters from the yeast blend.
Taste. Strong and complex hop flavors of citrus peel, pine needles, and tropical fruit dominate. Bitterness is high but clean, lacking harshness. The malt character is low and unobtrusive, providing a soft crackery base. Finishes dry to medium-dry with a lingering, resinous aftertaste and a light, smooth alcohol note.
Mouthfeel. Medium body with a smooth, slightly oily texture. Carbonation is medium-high. A restrained, well-integrated alcohol warmth is noticeable but not hot or solventy.
