Terra Tempo Brewing’s Build presents a sophisticated fusion of a Specialty IPA and a wild, spontaneous heritage. This oak-aged ale balances a dark malt foundation with an intricate hop quartet of Mosaic Spectrum, Citra Cryo, and farm-grown Fuggles and Cascade. The nose is a vibrant collision of tropical stone fruit and citrus against earthy, floral undertones, complemented by a nuanced funky complexity from the spontaneous fermentation. On the palate, restrained chocolate notes support an assertive bitterness, while time in oak contributes subtle tannins and depth. It is a delicate, balanced expression where modern hop technology and traditional wild brewing techniques co-exist.
Appearance. Deep dark brown to black in color (SRM 30-35). Topped by a persistent, light tan head with moderate lacing. Generally clear, though a slight haze from dry-hopping is acceptable.
Aroma. High intensity hop aroma featuring tropical berry from Mosaic Spectrum and bright citrus from Citra Cryo, grounded by the earthy, floral spice of farm-grown Fuggles and Cascade. Low to moderate malt notes of toast and light chocolate are present, accompanied by a subtle funky ester profile and a hint of vanilla-scented oak.
Taste. Assertive citrus and tropical hop flavors lead, followed by the spicy, herbal character of Fuggles. A light, restrained chocolate malt sweetness provides balance without becoming ashy or burnt. Fermentation character is complex, showing moderate esters and a touch of wild funk. Bitterness is medium-high, leading to a dry, lingering finish with a faint oak-derived tannin.
Mouthfeel. Medium-light to medium body with a smooth, slightly creamy texture. Carbonation is moderate. A very light oak-driven astringency is present, with no significant alcohol warmth.
