This Specialty Cider, crafted exclusively from membrillo (quince) via the ancestral method, presents a sophisticated sensory profile. The nose is dominated by the intense, exotic perfume of ripe quince, offering notes of wildflower honey, rose petals, and tropical guava. On the palate, the ancestral carbonation provides a refined, creamy mousse that lifts the fruit's inherent tartness. Expect a complex interplay of bright acidity and firm tannins, characteristic of the membrillo fruit, leading to a bone-dry, lingering finish. The disgorgement process ensures a polished presentation while preserving the vibrant, rustic soul of this unique pome fruit ferment.
Appearance. Brilliant gold to deep straw color; persistent, fine-bubbled white head with excellent clarity resulting from the disgorgement process.
Aroma. High intensity; pungent floral notes of jasmine and honeysuckle, backed by aromatic quince fruit, light beeswax, and a subtle, clean yeastiness from the pét-nat fermentation.
Taste. Assertive quince flavor featuring a blend of tart apple, citrus peel, and floral pear. Initial sharp acidity is balanced by a distinct tannic structure. No hop bitterness. Finish is remarkably dry and clean with a lingering floral astringency.
