This Pet Nat cider highlights the legendary Kingston Black apple through a wild yeast fermentation that delivers complex, rustic sensory layers. Naturally sparkling and unfiltered, it presents a vibrant, raw energy typical of the variety. The sensory profile is defined by a sophisticated balance of sharp acidity and firm tannins, characteristic of the bittersharp fruit. Aromas of spicy apple skin, earthy funk, and ripe orchard fruit lead into a structured palate where the heritage fruit’s tannins provide a drying, sophisticated grip. At 7.5% ABV, it concludes with a clean, lingering finish that celebrates the unadulterated character of the unsprayed orchard.
Appearance. Deep gold to burnished amber (SRM 8-12); hazy to opaque appearance with significant sediment due to being unfiltered; naturally sparkling with a fine-beaded, white effervescent head that dissipates quickly.
Aroma. High intensity; dominant character of ripe Kingston Black apples with spicy notes of clove and cinnamon; prominent wild fermentation aromatics including earthy damp hay, light leather, and a rustic funk; no malt or hop character; clean but noticeably warming ethanol.
Taste. Initial impression is bone-dry and sharply acidic; rich apple flavor mimics the aroma with savory skin and spicy fruit notes; firm tannic bitterness provides a structured, slightly astringent mid-palate; wild yeast contributes a complex phenolic depth; finish is long and drying with a lingering apple-skin tartness.
