This 2020 vintage English Cider presents a sophisticated dialogue between two iconic apple varieties. The Bramley apples provide a bright, piercing acidity that enlivens the palate, while the Chisel Jersey fruit introduces a firm, tannic structure and earthy depth characteristic of traditional bittersweet varieties. As a keg-fermented, live cider, it displays remarkably soft, fine natural bubbles that enhance its creamy texture. The three years of maturation have refined the profile, resulting in a complex, bone-dry character where rustic orchard fruit meets a clean, vinous finish. It is a structured and expressive cider that balances sharpness with a lingering, savory astringency.
Appearance. Deep gold to light amber in color. Exhibits a slight, natural haze due to its live, unfiltered nature. The carbonation produces a delicate, fine-beaded head that dissipates quickly, leaving a thin collar.
Aroma. High intensity with a complex blend of sharp malic acidity and rich, earthy apple skins. Distinctive notes of bruised apple, hay, and a light leathery phenolic character from the Chisel Jersey apples. No sulfur compounds are present, allowing a pure, matured orchard fruit bouquet to dominate.
Taste. The initial impression is defined by the sharp, clean tartness of Bramley apples. This is immediately followed by a robust mid-palate of bittersweet tannins, providing a drying, mouth-coating grip. Flavors of dried apple peel and spice lead to a bone-dry, clean finish. The fermentation is complete, leaving no residual sugar, resulting in an elegant and savory aftertaste.
Mouthfeel. Medium-full body with a notable weight from both the 7% alcohol and the high tannin content. The mouthfeel is remarkably smooth and creamy due to the soft, natural keg-conditioned carbonation. Moderate astringency provides a pleasant, structured bite.

Temple Cider is a small-scale craft cider producer in West Dorset, close to the borders of both Devon and Somerset.
