This vibrant Wild Specialty Beer captures the essence of a summer sunset with its striking infusion of fresh strawberries and tart blackcurrants. The aroma leads with an intense, jammy berry profile, supported by a clean lactic acidity and a subtle hint of creamy sweetness from the addition of lactose. On the palate, the bright strawberry fruitiness is complemented by the deeper, earthy notes of blackcurrant, resulting in a refreshing acidity that balances the residual milk sugar. The finish is crisp yet fruited, making for a captivating and highly sessionable sour ale that glows with expressive fruit character.
Appearance. Vivid pink to soft reddish-rose hue; displays a moderate pink-tinted head with fair retention; slight haze is present due to fruit solids and the addition of lactose.
Aroma. Moderate to high intensity of fresh, ripe strawberries and darker, slightly floral blackcurrant. A clean, lactic sourness provides a sharp edge, while a soft, milky sweetness from lactose rounds out the fruit aromatics. Low bready malt and negligible hop character.
Taste. Initial burst of tart strawberry and tangy blackcurrant fruit. The fermentation character is cleanly acidic, tempered by a noticeable lactose-driven sweetness that prevents it from being bone-dry. Minimal hop bitterness; the finish is refreshing and fruity with a lingering berry aftertaste and a smooth beery sweetness.
Mouthfeel. Medium-light body with a slight creaminess from the lactose. Moderate to high carbonation provides a refreshing prickle. No alcohol warmth; very low astringency despite the use of dark fruit skins.
