This decadent Imperial Stout presents a masterful sensory tapestry woven from nine months in Panamanian and Nicaraguan rum casks. Enticing aromas of rich molasses, toasted oak, and dark raisin give way to a luxurious cascade of bittersweet cocoa, warm cinnamon, and sweet vanilla beans. On the palate, the deep, roasted malt backbone is wonderfully elevated by the complex fruitiness of mulato chilies and a subtle, earthy prickle of smoky chipotle. Intensely complex and comforting, it strikes a sophisticated balance between decadent sweetness, spirituous warmth, and a lingering, gently spiced, dark chocolate finish.

Appearance. Jet black and completely opaque (40+ SRM) with a thick, dense, dark brown head showing moderate retention. Highly viscous, clinging to the glass with prominent legs upon swirling.

Aroma. High intensity. Upfront aromas of dark chocolate, cocoa, and molasses blend seamlessly with rich rum-barrel notes of toasted oak, vanilla beans, and sweet raisin. Behind the sweet spirit character lies a complex weave of warming cinnamon and the earthy, dark-fruit and leather qualities of mulato chilies, with just a hint of smoky chipotle. Yeast esters are low, masked by the intense barrel and adjunct profile.

Taste. Initial impression is richly sweet and decadent, immediately flooded with flavors of liquid dark chocolate, brown sugar, and sweet vanilla beans. The mid-palate reveals layers of Panamanian rum, oak tannin, and dark grapes, balanced by a soft cinnamon spice. As the sweetness crests, a gentle earthy warmth from the chipotle and mulato chilies emerges, providing a counterpoint to the roasted malt bitterness. The finish is long, complex, and warming, dry-leaning despite the initial sweetness, with lingering notes of cocoa, dark dried fruit, and a pleasant, throat-warming chili prickle.

Mouthfeel. Full to very full-bodied with a chewy, velvety, and luscious texture. Carbonation is low to moderate, enhancing the creamy coating nature of the liquid. A distinct, smooth alcohol warmth is present but beautifully integrated, accompanied by a soft, tingling chili heat that avoids harshness or excess astringency.
