This Imperial Stout presents an imposing sensory landscape, shaped by extensive aging in Speyside, Highland, and Islay whisky barrels. The profile is a profound marriage of bittersweet chocolate, espresso, and peat smoke, accented by the delicate floral and honeyed notes typical of Highland oak. On the palate, the Islay influence provides a bold, medicinal smokiness that weaves through deep layers of roasted malt, dark molasses, and dried figs. The finish is remarkably complex, balancing a rich, spirituous warmth with the lingering dryness of charred oak and Speyside orchard fruit. It is a harmonious yet intense experience, showcasing a masterfully layered barrel character.
Appearance. Opaque, jet black (40 SRM). Pours with a dense, dark tan head that shows moderate retention, leaving thick, oily legs on the glass as the liquid recedes.
Aroma. High intensity and deeply complex. Dominant aromas of espresso and dark chocolate are layered with Islay-derived peat smoke, medicinal iodine, and charred oak. Secondary notes of heather honey and light orchard fruit from the Speyside and Highland casks emerge as it warms, supported by esters of black currants and raisins.
Taste. Initial flavors of heavily roasted malt, black licorice, and unsweetened cocoa lead the palate. The whisky barrel influence is prominent, contributing earthy peat, campfire smoke, and a touch of vanillin. Bitterness is firm and balancing. The finish is long and complex, featuring a lingering spirituous warmth, dark fruit character, and a final hint of dry, woody smoke.
Mouthfeel. Very full-bodied and chewy with a velvety, viscous texture. Carbonation is low but sufficient to provide lift. A smooth, noticeable alcohol warmth is present, reflecting the strength of the base and the barrel aging.
