Tempest Brewing Co’s Mango Moon is a vibrant Wild Specialty Beer that balances tropical indulgence with sharp, citrus-led refreshment. It opens with an intense aroma of ripe, juicy mango and zesty lime peel, layered over a subtle, earthy funk characteristic of wild fermentation. On the palate, a puckering lime acidity provides a crisp structure that cuts through the nectar-like fruit essence. Despite its 4.5% ABV, it maintains a satisfying presence, finishing dry with a lingering tropical tang. This profile captures the essence of a tropical summer, blending wild fermentation complexity with a bold, fruit-forward character that remains approachable and refreshing.
Appearance. Deep gold to pale orange with a distinct haze from fruit solids. Pours with a moderate white head that shows moderate to low retention due to the acidic environment, leaving light lacing.
Aroma. High intensity aromatics of fresh-cut mango and bright lime zest. A clean lactic sourness is present, accompanied by very subtle leathery or hay-like funk from the wild fermentation. Malt and hop aromas are negligible, allowing the specialty ingredients to shine.
Taste. The flavor leads with a sharp, puckering lime acidity and a burst of juicy mango. While the fruit character is lush, the fermentation is primarily dry, stripping away heavy sugars. Low bitterness (approx. 5-10 IBU) allows the zesty acidity to provide the balance. The finish is crisp and tart, with a lingering mango aftertaste.
Mouthfeel. Medium-light body with a slightly smooth texture from the mango additions. High carbonation provides a prickly, refreshing sensation. No perceived alcohol warmth at 4.5% ABV. Minimal astringency.
