Inspired by the roadside cafes of Thailand, this Imperial Gose is a decadent liquid interpretation of mango sticky rice. A massive 9% ABV provides a plush, warming foundation for an explosion of sun-ripened mango purée and creamy desiccated coconut. The inclusion of torrified rice and palm sugar adds a luxurious, silken weight and a hint of caramelized sweetness that balances the characteristic lactic tartness of the Gose style. While a delicate saline edge and bright acidity remain at the core, the profile is dominated by tropical fruit intensity and a rich, milky mouthfeel, resulting in a complex, dessert-like experience that remains refreshingly balanced.
Appearance.Deep gold to light orange (SRM 6-8); dense, off-white head with moderate retention; opaque and hazy due to the heavy addition of mango purée and torrified rice.
Aroma.High intensity of ripe, succulent mango and rich, nutty coconut. Low bready malt and grainy rice notes are complemented by a faint, earthy sweetness from palm sugar. A clean, lactic tartness is present, with virtually no hop aroma and only a whisper of herbal coriander.
Taste.Initial impression is a bold burst of sweet mango and creamy coconut, supported by a doughy, bready malt backbone and a hint of caramelized sugar. Medium-high lactic acidity provides a sharp, refreshing counterpoint to the fruit. A light saline character emerges mid-palate, enhancing the tropical flavors. Bitterness is very low, leading to a lingering, fruit-forward finish that is sweet yet tempered by acidity.
