Helix by Tempest Brewing Co is a complex Specialty IPA that marries the spicy character of rye with the vibrant profiles of Strata and Azacca hops. The sensory journey begins with an explosion of ripe mango and honeydew melon, evolving into earthy notes of floral pollen and resinous, dank pine. The addition of rye imparts a distinctive peppery note and a satisfyingly thick viscosity to the mouthfeel. This beer maintains the characteristic dryness and hop-forward balance of the style, offering a crisp, clean finish that highlights the interplay between grain spice and tropical fruit.
Appearance. Deep gold to copper-amber (7-12 SRM). Moderate-sized, persistent off-white head with significant lacing. Clear with a slight haze.
Aroma. Moderate to high hop aroma featuring distinct notes of ripe mango, honeydew melon, and a floral pollen character. Underpinned by dank pine and resinous tones from Strata and Azacca. Low to moderate malt presence with a noticeable spicy, peppery rye quality and very low caramel sweetness. Clean fermentation profile.
Taste. Prominent hop flavor of tropical fruit, specifically mango and sweet melon, followed by resin and dank pine. The rye malt provides a clear peppery spiciness that complements the hops. Medium-high bitterness provides a firm backbone. Dry finish with a lingering resinous aftertaste and a slight grainy spice.
Mouthfeel. Medium to medium-full body with a notable oily viscosity from the rye addition. Moderate carbonation. Smooth with very light alcohol warmth and a clean, non-astringent mouthfeel.
