Tempest Brewing’s Cherry Bomb is an evocative Wild Specialty Beer that layers the complex character of Morello, Nalina, Valenska, and Johanna cherries over a zippy, house-sour yeast base. The result is a vibrant, ruby-hued ale defined by a striking balance of sharp lactic acidity and deep, juicy fruit. Aromas of rich Kirsch and subtle funk transition into a palate filled with bright, tart cherry flesh and a hint of stone fruit sweetness. The brisk carbonation and light body elevate the intense fruit profile, finishing exceptionally clean with a lingering, refreshing tang that highlights the multi-dimensional cherry blend.
Appearance. Deep ruby to garnet with a pink-tinted, frothy head that exhibits moderate to low retention. Slight haze is present from the heavy fruit addition and wild yeast fermentation.
Aroma. High intensity aromatics of fresh Morello cherries and concentrated Kirsch. Secondary notes include earthy, lactic funk and lemon zest from the house-sour yeast blend. Malt and hop characters are virtually absent, allowing the fruit and fermentation acids to dominate.
Taste. Leading with a sharp, clean lactic acidity that immediately highlights the blend of sweet and tart cherries. The mid-palate reveals layers of juicy cherry skins and a subtle almond-like pit character. Very low bitterness allows the fruit’s natural tartness to provide balance. The finish is dry and puckering with a lingering cherry-pulp aftertaste.
Mouthfeel. Light-bodied and crisp with high, effervescent carbonation. No alcohol warmth is perceived. Noticeable acidity provides a sharp, refreshing sting on the tongue without being overly astringent.
