Imperial IPA 8.5 º
This Double IPA captures a vivid sensory landscape through an intricate blend of Citra, Nelson Sauvin, Simcoe, Citra Cryo, Comet, and Saaz hops. The aroma is an intense bouquet of tropical passionfruit and zesty citrus, accented by a refined spicy floral note from the Saaz. On the palate, juicy layers of mango and grapefruit are balanced by a firm, piney resinous bitterness that provides essential structure against the 8.5% ABV. A lean, grainy malt presence allows the hop character to remain the focus, concluding with a clean, dry finish and a lingering, nostalgic summer warmth.
Appearance. Deep gold to light copper (8–12 SRM) with a slight, attractive haze from the intensive dry-hopping. Features a persistent, creamy off-white head with significant lacing.
Aroma. High intensity hop aroma featuring prominent notes of grapefruit, crushed white grape, and passionfruit. Subtle resinous pine and a hint of wild, zesty citrus are supported by a neutral, clean malt background and a light, floral spice.
Taste. Initial burst of tropical fruit and citrus oils followed by a moderately high bitterness that is firm but smooth. Clean, cracker-like malt flavors support the hops without adding heavy sweetness. The finish is medium-dry and crisp, leaving a pleasant, lingering hoppy aftertaste of pine and grapefruit pith.
Mouthfeel. Medium body with a smooth, soft texture and moderate carbonation. A well-integrated, gentle alcohol warmth is present, providing a full-flavored experience without any harsh astringency.
