Taka is a refined Grisette that marries the rustic charm of a farmhouse ale with nuanced fruit integration. A year-long residency in neutral oak barrels provides a structured, bone-dry foundation, while a six-month maturation on apricots imparts a delicate, sun-ripened stone fruit complexity. The sensory profile is defined by a crisp, highly attenuated character typical of the style, offering aromas of fresh apricots, subtle vanillin from the wood, and a peppery Belgian yeast spice. This session-strength Saison finishes exceptionally clean with a soft, grainy wheat presence, making it both sophisticated and remarkably refreshing.
Appearance. Very pale straw to light gold (3-5 SRM). Pours with brilliant clarity topped by a dense, rocky white head with excellent retention and delicate Belgian lacing. Highly effervescent.
Aroma. Moderate to high intensity. Bright, fresh apricot dominates the fruit profile, supported by a spicy, black pepper yeast character. Low grainy malt notes reminiscent of wheat and hay. The neutral oak contribution is subtle, providing a faint woody dryness rather than heavy tannin.
Taste. Bone-dry and highly attenuated. Initial flavors of tart apricot and lemon zest give way to a rustic, grainy malt backbone. Moderate hop bitterness is well-integrated, balancing the fruit acidity. Fermentation character is peppery and earthy. The finish is crisp, short, and very clean with a lingering stone fruit skin and mineral quality.
Mouthfeel. Light body with high carbonation, creating a prickly, effervescent sensation on the palate. No alcohol warmth. Very low astringency from the oak maturation; exceptionally crisp and refreshing.
