This barrel-aged Berliner Weisse radiates a vibrant sensory profile inspired by the Nova Scotia harvest. The time spent in wood introduces nuances of black tea and a grounding earthy minerality. Appearance. Pale straw (2–3 SRM) with a slight haze from the fruit and wheat additions. Pours with a large, dense white head that shows poor retention due to high acidity, featuring high effervescence.
Aroma. High intensity with a dominant, sharp lactic sourness. Complex fruity notes of yellow plum, tart apple, and lychee are layered with floral elderflower and a distinctive earthy minerality.
