Stars Align is a modern, fruit-forward interpretation of an American Pale Ale, showcasing a collaboration focused on vibrant hop expression. The experience is defined by a lush, pillowy body derived from a substantial addition of rolled oats. The hop architecture is complex, utilizing Citra and Azacca in the whirlpool to build a tropical foundation, which is then amplified by a dry-hop of Cryo Citra and Cryo Idaho 7. These selections, alongside an extra dose of Idaho 7, deliver an intense sensory profile of stone fruit and pineapple. It successfully balances a soft, hazy texture with the bright, clean finish characteristic of the style.
Appearance. Straw to pale gold (4–6 SRM). Pours with a hazy, opaque clarity due to the heavy oat grist and significant dry-hopping. Features a large, persistent white head with excellent lacing.
Aroma. High intensity hop aroma featuring prominent notes of mango, pineapple, and ripe peach. The Cryo Citra provides a sharp citrus edge, while Idaho 7 adds deep stone fruit and a hint of resin. Low grainy malt sweetness persists in the background.
Taste. Immediate flavors of tropical fruit and apricot lead the palate. The combination of Azacca and Citra yields lime and passionfruit notes, while the Idaho 7 contributes a lingering peach nectar quality. Bitterness is moderate and clean, supporting a slightly sweet, oaty malt backbone. The finish is dry but remains coated in hop oils.
Mouthfeel. Medium body with a distinctively creamy and pillowy texture from the rolled oats. Carbonation is moderate. Smooth and soft on the palate with no perceived alcohol warmth and very low astringency.
