Tanker’s Ketser is a sophisticated Flanders Red Ale that leans into the dark side of fermentation, utilizing a complex blend of Brettanomyces, Lactobacillus, and Pediococcus. This deep burgundy ale offers a sophisticated sensory journey, leading with a sharp, refreshing acidity reminiscent of a vintage red wine. Intricate layers of dark fruit—specifically succulent dark cherry, ripe plum, and tart currant—intertwine with a soft, toasty malt foundation. The wild fermentation imparts a subtle earthy depth and complexity, while the clean, dry finish provides a crisp, puckering structure. It is a bold, intensely fruity, and deeply tart expression of traditional Belgian-style wild fermentation.

Appearance. Deep red to burgundy in color with excellent clarity. It pours with a pale tan head that shows moderate retention and leaves light lacing on the glass.

Aroma. High intensity fruity-sour profile. Dominant notes of black cherry and red currant are complemented by secondary plum and fruit leather. The sourness is moderate to high with a slight acetic sharpness and a noticeable earthy, leathery Brettanomyces character. Malt presents as light toast and a hint of chocolate, with no hop aroma.

Taste. The initial impression is a bright, tart acidity. Intense flavors of dark cherry, plum, and currant follow, supported by a medium-low toasty malt backbone. Fermentation character is complex, balancing lactic sourness with a well-integrated, wine-like acetic touch. Bitterness is restrained, as balance is achieved through acidity and tannins. The finish is dry and lingering with a crisp aftertaste.

Mouthfeel. Medium body with a prickly, refreshing acidity and moderate carbonation. Despite the higher alcohol content, warmth is well-integrated and subtle. A light, wine-like astringency from tannins adds structure and enhances the dry finish.
