Despite its wild fermentation origins, the pastry influence provides a luscious, rounded character where the orchard fruit tartness is softened by decadent sugars. It balances a bright, lactic tang with a lingering, honeyed finish, creating a sensory bridge between a rustic farmhouse ale and a refined spiced pastry with a well-integrated 5% ABV.
Appearance. Deep gold to pale amber with a persistent haze. Pours with a moderate, off-white head that shows fair retention for the style, leaving light lacing.
