This Wild Specialty Beer presents a complex tapestry of fruit and fermentation. The nose is dominated by the floral essence of Rapeseed honey and creamy Coconut, followed by a bright medley of Strawberry and Raspberry. On the palate, a sharp lactic acidity cuts through the lush, rounded texture provided by Banana, while the honey adds a wildflower sweetness that balances the tartness. The finish is remarkably clean despite the lack of lactose, showcasing the raw character of the fruit. It is an expressive and vibrant example of the style, blending tropical and orchard notes with a rustic, wild edge.
Appearance. Deep pinkish-red with a soft, hazy opacity. The head is pink-tinted, moderate in height, with fair retention and slight lacing on the glass.
Aroma. High intensity; immediate notes of fresh strawberry and tart raspberry mingle with a distinct tropical coconut creaminess. A floral, herbal honey character from the Rapeseed honey is evident, alongside a subtle banana sweetness and a clean lactic sourness.
