The BeeKeeper Vol. 8 is a complex Wild Specialty Beer that showcases a vibrant tapestry of stone and tropical fruits. The primary sensory experience is driven by succulent layers of Apricot, Mirabelle, and Peach, seamlessly melded with the exotic punch of Mango. Rapeseed Honey provides a delicate floral nuance rather than residual sweetness, as the wild fermentation ensures a bone-dry, acidic profile. Funky, earthy Brettanomyces notes weave through the fruit character, while a bright, lactic tartness provides a crisp, refreshing structure. This harmonious blend results in a sophisticated, multidimensional wild ale with a lingering, fruit-skin finish and high sensory complexity.

Appearance. SRM 6-9; deep gold to sunset orange with a persistent hazy clarity; pours with a moderate white head that dissipates to a thin collar with minimal lacing due to high acidity.
