This Wild Specialty Beer is a decadent Pastry Sour that artfully balances sharp lactic acidity with rich dessert-inspired elements. An intense fusion of earthy, tart bilberry and lush tropical mango dominates the sensory profile, supported by the delicate floral sweetness of acacia honey. A smooth layer of vanilla provides a creamy aromatic bridge to unexpected notes of dark chocolate, which add a sophisticated cocoa depth in the background. The result is a jammy, multi-layered experience where the wild fermentation's tang is softened by the indulgent pastry ingredients, finishing with a harmonious blend of fruit skin and creamy sweetness.

Appearance. Opaque and viscous, displaying a deep magenta to royal purple hue. It is topped by a dense, violet-tinted foam head with moderate retention and significant lacing.

Aroma. High intensity aromatics of jammy bilberry and ripe, pulpy mango. These are layered with prominent floral honey, sweet vanilla bean, and a subtle hint of dusty cocoa powder over a clean, lactic sour base.

Taste. Initial impression is a sharp, refreshing acidity that transitions into succulent mango and tart berry flavors. The mid-palate features a floral acacia honey sweetness that balances the sourness, leading to a finish of smooth vanilla and lingering dark chocolate. Hop bitterness is nearly absent, allowing the complex adjuncts to define the balance.

Mouthfeel. Medium-full body with a velvety, creamy texture derived from the honey and vanilla. Carbonation is moderate, providing a slight prickle that cuts through the fruit density. Very low alcohol warmth.
