This vibrant Wild Specialty Beer, branded as a Hoptart IPA, delivers a sophisticated interplay between sharp acidity and lush hop character. The aroma is dominated by the tropical intensity of Galaxy, the distinct pink grapefruit and dried rose notes of Talus, and the punchy lime zest of Citra. Together, they create a sensory profile reminiscent of a tropical fruit tart. On the palate, a clean, lactic sourness provides a refreshing backbone for flavors of passionfruit, sage, and citrus pith. It finishes exceptionally dry and crisp, with a lingering tang and a bright, resinous hop finish that invites the next sip.
Appearance. Pale straw to light gold (3-5 SRM). Pours with a moderate white head that dissipates fairly quickly due to acidity, leaving light lacing. Displays a slight, hazy luminescence typical of heavily dry-hopped wild ales.
Aroma. High intensity. Forward tropical fruit notes of passionfruit and peach from Galaxy hops, complemented by the unique woody, floral, and grapefruit pith character of Talus. Citra adds a bright top note of lemon and lime. A clean, lemony lactic sourness is evident, with minimal malt presence and no significant funk or barnyard notes.
Taste. Initial impression is sharply tart but refreshing. Significant hop flavors of guava, citrus, and a hint of herbal sage follow. The bitterness is moderate but amplified by the crisp acidity. Malt flavor is low, providing just enough cracker-like base to support the hops. The wild fermentation lends a clean, acidic edge rather than complex funk. Finishes very dry and tart with a citrusy aftertaste.
Mouthfeel. Medium-light body, feeling lighter than the starting gravity suggests due to high attenuation and acidity. High carbonation provides a prickly, effervescent sensation. No alcohol warmth is perceived at 5.5% ABV. Low astringency.
