This Cold Rice IPA presents a remarkably crisp and lean profile, utilizing a rice-adjunct grist to emphasize hop brilliance. A vibrant bouquet led by Motueka, Mosaic, and HBC1019 hops delivers intense layers of zesty lime, crushed berries, and tropical passionfruit. The fermentation is exceptionally clean, mirroring a lager-like purity that allows the nuanced hop oils to shine without interference. On the palate, a sharp but refined bitterness cuts through a bone-dry finish, leaving a refreshing trail of citrus zest and pine. This American IPA balances modern tropical aromatics with a classic, high-clarity refreshment and a snappy, clean mouthfeel.
Appearance. Color is pale straw to light gold (6 SRM). Brilliant clarity with a tall, bright white head featuring excellent persistence and fine lacing.
Aroma. High intensity hop aroma featuring distinct lime zest from Motueka, blueberry and stone fruit from Mosaic, and a unique tropical punch of peach and citrus from HBC1019. Malt is very low, providing a faint crackery, grainy backdrop. Fermentation is very clean with no significant esters.
Taste. Bold hop-forward flavors mirroring the aroma: lime, tropical fruit, and dark berries. Bitterness is firm and assertive but clean, supported by a very low, neutral grainy malt character. The finish is exceptionally dry and crisp, with a lingering hoppy and bitter aftertaste.
Mouthfeel. Medium-light body with a very crisp, lean texture. Carbonation is medium-high, enhancing the refreshing quality. No alcohol warmth or astringency.
