Mountain Candy IPA is a saturated expression of the modern American IPA, leveraging a double dry-hopped technique to project a vivid sensory profile. The experience is dominated by an intense aroma of juicy stone fruit and whimsical rainbow candy, underpinned by a sharp, citrusy dankness. At 7.5% ABV, it presents a clean fermentation character that ensures the hop oils remain the focal point. A restrained, grainy malt backbone provides just enough structure to support the aggressive hopping without adding cloying sweetness. It finishes with a firm bitterness and a lingering resinous quality, characteristic of a well-crafted, high-gravity hop-forward ale.
Appearance. Color is a deep gold to light reddish-amber (approx 8-10 SRM). It supports a medium-sized, off-white head with excellent persistence and fine lacing. Clarity is mostly clear, though a very light haze is present from the double dry-hopping process.
Aroma. High intensity hop aroma featuring prominent notes of peach and apricot stone fruit, alongside a unique sugary, rainbow candy sweetness. A secondary layer of citrusy dankness and pine resin provides complexity. The malt is low and clean, providing a light grainy base with no significant caramel or toast.
Taste. The initial impression is an explosion of citrus and tropical fruit flavors. High hop bitterness is firm but integrated, supported by a low, clean, grainy maltiness. Flavors of stone fruit and resinous pine dominate the mid-palate. The finish is medium-dry with a lingering, hoppy and bitter aftertaste. Fermentation is clean with very low fruity esters.
Mouthfeel. Medium body with a smooth, slightly oily texture from the heavy hop load. Carbonation is medium-high, providing a crisp bite. A light, smooth alcohol warmth is present but well-integrated, with no perceived astringency or harshness from the hops.
