A foundation of Pilsner and wheat malt provides a soft, doughy backdrop for the sharp, lactic tartness and the characteristic citrusy lift of coriander. Appearance. Yellow (3-4 SRM), moderate to full haze, tall white head with tight bubbles and good retention; highly effervescent.
Aroma. Moderate-high intensity; sharp lactic sourness and a bready, doughy malt base. Complex botanical layers featuring cooling anise, herbal fennel, and piney juniper. Distinct citrusy coriander and floral cardamom notes are present with a hint of spicy clove; no hop aroma.
Taste. Noticeable lactic tartness balanced by a bready malt profile and light, mineral salt character. Intense spice flavors of cooling anise and fennel lead, followed by warming cardamom and peppery clove. The coriander adds a bright lemony note. Very low bitterness with a dry, fully-attenuated, and refreshing finish.
