This Experimental Mead offers a decadent sensory journey, leading with a lush bouquet of ripe Blackberry and dark-roasted Coffee. The influence of White Chocolate and Vanilla creates a velvety, dessert-like foundation, while Cinnamon provides a warm, spicy counterpoint to the intense sweetness of Maple. Aging in Bourbon Barrels adds depth with notes of charred oak and caramel, further complexified by the lingering roasted grain character from the Maple Stout Barrels. It is a full-bodied, opulent pour where the honey base is harmoniously integrated with layers of breakfast-inspired adjuncts, finishing with a sophisticated spirituous warmth and lingering fruit preserves.
Appearance. Deep, saturated ruby to dark purple; clear with significant viscosity and prominent legs (tears) upon swirling. Minimal to no head formation, characteristic of a still mead.
Aroma. High intensity; bold aromas of jammy blackberry and sweet maple syrup dominate, supported by rich, earthy coffee and spicy cinnamon. Secondary notes of vanilla bean, white chocolate, and bourbon-soaked oak provide a complex, warming backdrop.
Taste. Intensely sweet and multi-layered; starts with honeyed maple and tart blackberry. The mid-palate reveals creamy white chocolate and vanilla, balanced by the bitterness of roasted coffee and a sharp cinnamon snap. The finish is long and warming, featuring bourbon, oak, and a hint of dark malt character from the stout barrel seasoning.
Mouthfeel. Full-bodied and highly viscous with a thick, syrupy texture. Carbonation is low to still. Significant but smooth alcohol warmth from the 13% ABV and spirit barrels. Creamy and mouth-coating.
