This scarlet-hued Red Double IPA, a collaboration with Northern Monk, delivers an intense sensory experience defined by a massive hop profile. The aroma leads with high-intensity notes of ripe strawberry, sweet citrus, and resinous pine, supported by a backbone of golden toast. On the palate, Mosaic DynaBoost and Simcoe HyperBoost provide a concentrated 'hop candy' character that transitions into an assertive, bone-dry bitterness driven by CTZ and Columbus. Despite its 8% strength, the finish is remarkably clean and lingering, balancing the deep specialty malt character with sharp, New World hop saturation from Amarillo and Mosaic.
Appearance. Deep scarlet to ruby red (17–22 SRM). Persistent light tan head with fine lacing. Generally clear to slightly hazy due to intensive double dry hopping.
Aroma. High intensity hop aroma featuring prominent notes of sweet strawberry, orange zest, and grapefruit. Distinctive resinous pine and damp earth follow. Low to moderate malt presence suggests golden toast and a hint of caramelized sugar. Clean fermentation profile.
Taste. Bold initial impression of citrus oil and pine resin. Mid-palate reveals strawberry and tropical fruit flavors. High bitterness is firm and clean. Malt flavor provides toasted bread crust and light toffee notes without cloying sweetness. Finishes bone-dry with a lingering resinous and citrusy aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Moderate carbonation. Noticeable but well-integrated alcohol warmth. Low astringency despite the high hopping rate.
