Sudden Death Brewing

Sour Squid is a massive Wild Specialty Beer that balances aggressive acidity with decadent sweetness. A complex fermentation profile driven by lactic-producing yeast and tropical Kveik provides a foundation for a bright citrus explosion of lemon, orange, and grapefruit peel. These sharp notes are beautifully rounded by the addition of honey and vanilla, creating a creamy, dessert-like character that mimics a citrus custard. A distinct touch of sea salt cuts through the richness, elevating the fruit flavors. Despite the high alcohol content, the beer remains remarkably cohesive, offering a sensory tug-of-war between vibrant tartness and lush, sugary depths.

Appearance. Pours a hazy, deep golden to burnt orange color (8-12 SRM). Features a moderate, off-white head with fair retention that fades to a persistent ring, leaving light lacing. Carbonation is visible through the slight opacity.

Aroma. High intensity aromatics of sharp lactic acidity and a massive citrus medley of grapefruit, lemon zest, and sweet orange. Underlying notes of floral honey and smooth vanilla provide a softening effect. Secondary fermentation esters from the Kveik yeast contribute hints of overripe pineapple and tropical fruit.

Taste. The initial impression is one of punchy lactic sourness and bold citrus juice. Mid-palate, the flavor transitions into a complex sweetness from honey and vanilla, reminiscent of a citrus tart. Hop bitterness is very low, as the profile is dominated by acidity and fruit. A subtle salinity from sea salt emerges on the finish, which is long, sweet-tart, and warming.

Mouthfeel. Medium-full body with a creamy, almost viscous texture enhanced by vanilla and honey. Carbonation is moderate. A significant and noticeable alcohol warmth is present, reflecting the 10.1% ABV, though it remains well-integrated without being harsh.
