Subterranean is a vibrant West Coast IPA that showcases a sharp collision of resinous pine and bright citrus, anchored by a clean, dry profile. Mosaic hops lead the profile with a complex burst of blueberry and tropical fruit, while Chinook provides a classic Pacific Northwest backbone of sticky pine and grapefruit pith. The addition of Comet introduces a sharp, zesty lime and wild citrus edge. With its brilliant clarity and focused bitterness, it exemplifies the style's assertive yet balanced nature. A lean malt bill allows the nuanced hop oils to dominate from the first aromatic whiff through to the crisp, lingering finish.
Appearance. Deep gold to light amber (7 SRM); brilliant clarity with a tall, persistent white head that leaves significant lacing.
Aroma. High intensity hop aroma featuring prominent notes of grapefruit, pine resin, and tropical mango, supported by subtle blueberry and dank herbs. Malt is low and clean, suggesting fresh crackers.
Taste. Initial impression is sharply bitter and hop-forward. Medium-high hop flavors of grapefruit zest, pine needles, and tropical stone fruit. Low grainy malt sweetness provides a lean foundation without caramel interference. Finishes very dry and crisp with a long-lasting, clean bitterness and lingering hop oils.
Mouthfeel. Medium-light body with a smooth, crisp texture. Carbonation is medium-high, accentuating the dry finish. Very light, smooth alcohol warmth is present but well-integrated.
