This 2021 vintage Imperial Stout presents a decadent sensory profile defined by its collaboration-heavy adjunct profile. Layers of toasted coconut provide a tropical, creamy lift against a dense backdrop of dark chocolate and espresso-like roasted malts. The addition of caramel introduces a rich, burnt-sugar sweetness that is expertly balanced by a subtle undercurrent of salt, heightening the perception of cocoa and dark fruit esters like dried figs and prunes. At 11% ABV, the beer offers a sophisticated warmth that integrates seamlessly into the viscous, velvet-like texture, culminating in a lingering, bittersweet finish of charred grain and sweet confectionery.
Appearance. Opaque, jet black (SRM 40+) with a dense, dark tan head. Retention is moderate, leaving thick, oily legs on the glass indicative of high viscosity and the presence of coconut oils.
Aroma. Intense and complex, featuring primary notes of bittersweet chocolate and heavy roast complemented by prominent toasted coconut and buttery caramel. A faint brininess enhances the depth of dark fruit esters such as prunes and raisins. Alcohol is noticeable but smooth, carrying scents of vanilla.
Taste. Rich and multifaceted with an initial impact of dark roasted grain, espresso, and cocoa. The mid-palate reveals the sweet influence of caramel and the nutty, tropical character of coconut. A savory salt addition provides a counterpoint to the residual sweetness. Bitterness is firm but well-buffered by the malt density, leading to a long finish of lingering roasted bitterness and salt-caramel fudge.
Mouthfeel. Very full-bodied with a luscious, chewy, and velvety texture. Carbonation is low to moderate. A smooth, gentle alcohol warmth is persistent but integrated, lacking any sharp or solventy edges.
