Dios Mío, Man! is a robust Hazy IPA that showcases the vibrant complexity of Oregon-grown Strata hops. This high-gravity ale presents an intense sensory profile defined by “The Dude” of hops, delivering vivid layers of pineapple candy, luscious sweet melon, and a distinctive freshly trimmed bud dankness. The malt base remains supportive with light bready notes, allowing the hop-driven biotransformation to shine through. A thick, hazy body provides a soft canvas for the hop mayhem, leading into a semi-sweet finish that balances the massive fruit character. Despite its strength, the beer maintains a smooth, juicy drinkability that defines the style.
Appearance. Deep straw to golden-orange (SRM 4-6) with a brilliant opaque haze providing a glowing shine. Topped by a dense, meringue-like white head with excellent retention and thick lacing.
Aroma. High intensity hop aroma featuring pungent tropical fruit, heavy pineapple, and ripe cantaloupe. A prominent dank, herbal resin quality from the hops is layered over a clean, lightly bready malt background and subtle fruity fermentation esters.
Taste. Massively hop-forward with flavors of candied pineapple and honeyed melon. Bitterness is moderate but stays smooth and rounded, never becoming harsh. The malt provides a neutral grainy sweetness that supports a semi-sweet, juicy finish with a lingering tropical and resinous aftertaste.
Mouthfeel. Medium-full to full body with a soft, silky texture and moderate carbonation. A noticeable but well-integrated alcohol warmth is present, consistent with the high gravity, without any harshness or astringency.
