This 2020 vintage Imperial Stout presents a profound sensory journey, shaped by fourteen months of maturation in Irish whiskey barrels. Its pitch-black presence reveals an intricate bouquet of dark malts, offering deep layers of espresso, bittersweet chocolate, and black licorice. The whiskey-soaked oak introduces nuanced notes of vanilla, toasted wood, and a smooth, honeyed spirit character that complements the rich, roasted foundation. On the palate, a velvety texture carries flavors of dried figs and raisins, leading to a soul-warming finish where charred grain meets a soft, spirit-driven heat. It is a complex, harmonious ale designed for slow contemplation and cold winter nights.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a dense, deep tan head that shows moderate retention, leaving oily legs on the glass as it recedes due to high alcohol and viscosity.
Aroma. Intense and complex, dominated by roasted grain, dark chocolate, and heavy espresso notes. The barrel aging contributes distinct aromas of Irish whiskey, vanilla, and toasted oak. Background esters of raisins and prunes are present, with very low hop character.
Taste. Initial rich malt sweetness of cocoa and toffee, quickly followed by aggressive roasted bitterness and charred grain. The Irish whiskey influence adds a smooth, grainy sweetness and woody tannins. Finishes long and bittersweet with a lingering aftertaste of roasted malt and spirit-driven warmth.
Mouthfeel. Very full-bodied and chewy with a luscious, velvety texture. Carbonation is low, enhancing the creaminess. A significant, smooth alcohol warmth is present and well-integrated, providing a soul-warming sensation without being harsh.
