Sticks & Stones is a formidable Imperial Stout that balances aggressive hopping with a rich foundation of English crystal malt and roasted barley. This blend of beer aged in seventeen-year and eight-year Elijah Craig bourbon barrels with a fresh batch creates a sophisticated sensory profile. Deep notes of bittersweet chocolate and espresso from the roasted barley meld with the barrel’s contributions of charred oak, warm bourbon, and smooth vanilla. The English crystal malt provides a dark caramel sweetness that tethers the bold bitterness, resulting in a complex, velvety stout with a refined, lingering finish of dried fruit and spirit.
Appearance. Jet black and opaque (SRM 40+). It features a thick, creamy, dark tan head with moderate retention and significant lacing. High viscosity is evident as the beer leaves slow-moving legs on the glass.
Aroma. High intensity with a rich blend of bittersweet chocolate, espresso-like roasted barley, and dark caramel. The Elijah Craig barrels contribute prominent layers of vanilla, toasted oak, and a spirit-forward bourbon character, complemented by moderate esters of dried figs and raisins. Low earthy hop notes are detectable in the background.
Taste. An intense initial impression of dark chocolate and coffee roast is immediately followed by the depth of English crystal malt, providing toffee and burnt sugar sweetness. The barrel aging adds complex wood, vanilla, and warm bourbon flavors. Bitterness is firm and aggressively high but balanced by a substantial malt backbone. The finish is long and bittersweet, with a harmonious blend of roast and spirituous warmth.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture that feels mouth-coating. Carbonation is low to moderate. A smooth, noticeable alcohol warmth is present throughout, providing a comforting heat without being harsh.
