This Double IPA delivers a saturated sensory experience driven by a double dry-hopping of Mosaic and Azacca. The aromatic profile is intense, exploding with overripe mango, blueberry, and bright citrus zest from the Mosaic, while Azacca adds layers of spicy pineapple and stone fruit. Despite its 8% strength, the beer maintains high drinkability with a lean, neutral malt backbone that allows the hops to remain the focal point. Expect a clean fermentation profile and a firm, resinous bitterness that balances the fruit-forward character, leading into a dry, lingering finish that highlights the complex, modern hop tapestry.
Appearance. Deep gold to light orange (7-9 SRM) with a slight haze from the heavy dry-hopping. Features a moderate, creamy, off-white head with excellent persistence and intricate lacing.
Aroma. Intense hop aroma featuring heavy tropical fruit notes of mango and pineapple, alongside distinct blueberry and melon. Light citrus pith and floral undertones are supported by a very low, neutral grainy malt character and a clean, subtle alcohol note.
Taste. Dominant hop flavors of tropical stone fruit, berry, and spicy citrus. Bitterness is firm and assertive but lacks harshness. The malt provides a soft, unobtrusive support with faint bready notes. Finishes dry and clean with a long, resinous, and fruity aftertaste.
Mouthfeel. Medium body with a smooth, almost creamy texture. Carbonation is medium-high, providing a lively prickle. Includes a moderate, well-integrated alcohol warmth that complements the hop intensity without becoming solventy.
