Stone Ripper
Stone Ripper is a vibrant American Pale Ale that bridges the gap between Southern California's hop-forward tradition and Australian innovation. This "San Diego Pale Ale" pours a brilliant golden hue, unleashing a high-intensity hop profile driven by Cascade and Galaxy varieties. The classic Cascade provides a firm foundation of grapefruit and citrus, while the Galaxy hops introduce an exotic layer of passion fruit and tropical juice. A lean, grainy malt bill allows these "hoppy green buds" to shine, leading to a crisp, dry finish with a clean bitterness that borders on an IPA. It is a refreshing, aromatic tribute to coastal surf culture.
Appearance. Deep golden to light amber (6-8 SRM). Brilliant clarity. Large, off-white, persistent head with fine beads and excellent lacing.
Aroma. High hop intensity featuring prominent grapefruit, lemon zest, and resinous pine from the Cascade, complemented by intense passion fruit and peach notes from the Galaxy. Low neutral, grainy malt sweetness supports the aromatics. Clean fermentation profile with very low fruity esters.
Taste. Immediate hop impact of juicy grapefruit and tropical passion fruit. Malt flavor is low but provides a sufficient bready base for the aggressive hop character. Moderate-high bitterness that is firm but not harsh. Finishes very dry and clean with lingering notes of citrus rind and tropical fruit.
Mouthfeel. Medium-light body with a smooth, crisp texture. Moderate-high carbonation provides a lively, refreshing sensation. Very low alcohol warmth, well-integrated for 5.7% ABV.
