This massive Imperial Stout offers a decadent sensory experience defined by its complex layers of dark roasted malt and specialty adjuncts. The inclusion of pecans provides a distinct nutty depth, while the addition of rye and wheat contributes a subtle spicy graininess and a smooth, substantial texture. One quarter of the blend is aged in bourbon barrels, weaving threads of toasted oak, vanilla, and caramel into the rich tapestry of dark chocolate, espresso, and dried figs. At 11.5% ABV, it presents a warming, velvety presence on the palate, finishing with a balanced, bittersweet linger that highlights both its assertive roast and refined barrel character.
Appearance. Jet black and opaque (40+ SRM) with a thick, creamy, deep tan head showing moderate retention. High viscosity is evidenced by visible legs on the glass.
Aroma. High intensity with a complex blend of bittersweet chocolate, roasted coffee, and charred oak. Distinctive nutty notes from pecans are prominent, accompanied by dark fruit esters of prunes and raisins, a hint of vanilla, and a light peppery spiciness from the rye.
Taste. Initial impression of rich dark chocolate and espresso roast. The palate expands with nutty pecans, spicy rye grain, and a smooth wheat sweetness. Significant bitterness balances the malt depth. The finish is complex and lingering, featuring toasted oak, vanilla, and dark fruit, ending with a clean, warming roastiness.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is moderate-low, providing a soft lift to the dense liquid. A prominent but smooth alcohol warmth is present throughout.
