This intricate Belgian Golden Strong Ale offers a sophisticated sensory experience, blending traditional yeast-driven esters with a unique vinous character. Dried chamomile flowers provide a distinctive floral, tea-like herbal depth, while the inclusion of triticale and Belgian amber candi sugar ensures a robust yet highly attenuated fermentation profile. Appearance. Gold to deep gold (5–6 SRM). Brilliant clarity with persistent effervescence. A massive, rocky, white head with excellent retention and thick, characteristic Belgian lacing.
Aroma. High intensity; prominent pear and apple esters layered with floral chamomile and perfumy white grape notes. Subtle spicy phenols, peppery alcohol, and a faint, honey-like sweetness from the amber candi sugar over a neutral malt base.
Taste. Complex and very dry. Initial flavors of spicy Belgian yeast and herbal chamomile transition into bright, vinous character from the Muscat and Sauvignon Blanc grapes. A neutral malt backbone is countered by moderate bitterness and a lingering, dry, peppery finish with soft alcohol warmth.
Mouthfeel. Medium-light body with very high carbonation, creating a spritzy, effervescent mouthfeel. Alcohol warmth is noticeable but smooth and well-integrated. Highly attenuated with no significant astringency.
