Wild Predator presents a complex fusion of New World hops and wild fermentation character. This Brett Beer opens with a vibrant bouquet of tropical fruit and citrus—reminiscent of mango and grapefruit—which seamlessly integrates with the rustic depth of a cellar-matured farmhouse blend. The influence of various Brettanomyces strains introduces layers of stone fruit and a sophisticated funk, ranging from fresh hay to subtle leather. Spent time in the barrel contributes a delicate woody structure, while the high attenuation ensures a crisp, bone-dry finish. It is an expressive and evolving ale that balances modern hopping with traditional European wild-cellar techniques.
Appearance. Deep gold to light amber (6–9 SRM) with a persistent, frothy white head that leaves intricate lacing. Exhibits a slight haze typical of New World hops and unfiltered mixed fermentation.
Aroma. High intensity with a layered profile. Dominant tropical and citrus notes from the dry-hopping merge with apricot and pineapple esters. Background notes of wet hay, earthy funk, and a touch of oak vanillin from barrel aging.
Taste. Initial impression is bright and fruity, showcasing citrus and stone fruit. The mid-palate reveals a moderate earthy funk and light cracker-like malt.
