This wild interpretation of a Gose elevates the traditional German-style Wheat Ale through a bold American hop profile and complex fermentation. The base provides a tart, salty foundation that is transformed by massive additions of Citra and Amarillo hops, delivering vibrant layers of grapefruit, melon, and tropical fruit. Fermented with various Brettanomyces strains, it develops a signature funk and earthy depth that intertwines with the bright acidity. The result is a highly refreshing, effervescent experience where the crispness of Pilsner and wheat malts meets a rustic, wild character and a lingering, saline-tinged finish that is both complex and incredibly drinkable.
Appearance. Straw to light yellow (3–4 SRM). Unfiltered with a persistent moderate haze. Large, billowy white head with excellent retention and lacing, driven by very high carbonation.
Aroma. High intensity with a complex blend of tropical and citrus aromas from Citra and Amarillo hops, specifically grapefruit, lime, and mango. This is layered over a rustic Brettanomyces funk featuring notes of hay and light leather, alongside a sharp, lemony lactic tartness. Subtle coriander and a clean, doughy wheat malt presence provide a solid aromatic base.
Taste. Initial impression is a sharp, refreshing lactic acidity followed immediately by tropical fruit and citrus rind flavors. The Brettanomyces adds a dry, earthy complexity that evolves on the palate. While bitterness is low, the hop flavor is pronounced. A light bready malt profile and a noticeable mineral saltiness provide a savory counterpoint. The finish is bone-dry, crisp, and exceptionally clean.
Mouthfeel. Medium-light body that feels slightly fuller and rounder due to the addition of salt and wheat protein. Very high carbonation creates a lively, effervescent, and tingly sensation. No alcohol warmth is perceived; the acidity and salt provide a mouthwatering quality.
