This collaborative wild ale offers a sophisticated sensory journey, merging the rustic character of a spontaneous fermentation with the elegant, floral acidity of Riesling grapes. On the nose, a vibrant interplay of white peach, honeyed apricot, and elderflower emerges, backed by a complex, earthy funk reminiscent of wet hay and aged leather. The palate is bone-dry and remarkably crisp, showcasing the interplay between vinous tartness and subtle tannins derived from extended oak aging. A delicate minerality persists through the finish, echoing the Riesling influence while the Brett character provides a lingering, savory depth that remains bright and highly structured.
Appearance. Pale straw to light gold (4-6 SRM). Clear to slightly hazy with a fine, white, effervescent head that recedes quickly to a thin collar.
Aroma. High intensity; dominant vinous notes of white grape, apricot, and green apple. A moderate funky Brett character presents as hay and damp earth, complemented by soft vanilla and toasted wood from oak aging.
Taste. Initial impression is bone-dry and acidic. Flavors of tart Riesling grapes and citrus peel lead into a complex mid-palate of leathery funk and subtle oak tannins. Hop bitterness is very low, while the finish is exceptionally clean, dry, and mineral-forward with a lingering fruit skin tartness.
Mouthfeel. Medium-light body with high, prickly carbonation. A light tannic astringency from the grape skins and oak provides structure. Alcohol warmth is subtle and well-integrated.
