A sophisticated Brett Beer that beautifully integrates viticultural influence and wild fermentation. Co-fermented with Pinot Noir grapes, the profile leads with vibrant notes of red cherry, raspberry, and subtle grape skin tannins, layered over the rustic, earthy funk of spontaneous yeast. Aging in oak provides structural nuance with faint vanilla and toasted wood undertones that ground the fruit. The palate is bone-dry and highly effervescent, mimicking the crispness of a sparkling rosé. This collaboration with Weingut Brand delivers a vinous complexity where the bright acidity of the fruit meets a nuanced barnyard character for a refreshing, deeply layered finish.
Appearance. Deep pink to light garnet (10–15 SRM); moderate white to faintly rose-tinted head with fair retention and minimal lacing; slight haze typical of a spontaneous wild ale.
Aroma. High intensity with a complex bouquet of Pinot Noir grapes, strawberry, and cherry. Prominent wild yeast character featuring wet hay, barnyard funk, and a touch of goat blanket. Malt is very low and cracker-like, while the oak contributes a subtle dry woodiness. No hop aroma is perceived.
Taste. The initial impression is brightly fruit-forward with red berry and grape tartness. Malt flavor is minimal, providing a neutral backdrop for the assertive Brettanomyces character which includes earthy and spicy notes. Bitterness is very low, allowing the vinous acidity and oak tannins to provide structure. The finish is bone-dry and clean with a lingering fruity, slightly wood-aged aftertaste.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the dry sensation. Low alcohol warmth is well-integrated. A moderate tannic astringency from the Pinot Noir skins and oak aging adds a pleasant, wine-like grip on the tongue.
