This Brett Beer captures a sophisticated intersection of wild fermentation and viticulture. Co-fermented with Scheurebe grapes, the profile bursts with aromatic blackcurrant, juicy grapefruit, and ripe peach, layered over a rustic foundation of wet hay and earthy funk. Spontaneous fermentation lends a vibrant complexity that interplays with subtle oak-derived tannins. The influence of the Scheurebe grapes provides a vinous character, reminiscent of a crisp white wine, while the oak aging contributes structural depth. It finishes bone-dry and remarkably clean, showcasing the collaborative mastery of Stillwater and Freigeist in creating a balanced, highly nuanced wild ale.
Appearance.Pale gold to light amber (4–7 SRM). Pours with a moderate, white head that dissipates relatively quickly to a thin ring, leaving light lacing. Clarity is slightly hazy due to the wild fermentation and grape solids.
Aroma.High intensity. Dominated by vinous notes of white grape, blackcurrant, and grapefruit from the Scheurebe additions. Secondary aromas feature classic Brettanomyces funk: damp earth, hay, and a leather-like complexity. Very low malt aroma, with a touch of toasted oak and a faint, bright acidity.
Taste.Initial impression is exceptionally dry and fruit-forward. Flavors of tart peach and citrus pith meld with a rustic, spicy Brett character. Low bitterness, allowing the vinous acidity and grape tannins to provide structure. The finish is very dry and crisp with a lingering earthy-fruity aftertaste and zero residual malt sweetness.
Mouthfeel.Medium-light body, feeling leaner than the ABV suggests due to high attenuation. High carbonation provides a prickly, effervescent mouthfeel. Low alcohol warmth is well-integrated. A slight tannic astringency from the oak and grape skins adds a drying, wine-like grip.
