OKI is a decadent Imperial Stout that showcases a masterfully layered barrel program. The massive 13% ABV backbone carries an intense profile of bittersweet chocolate and espresso. Dual aging in bourbon and port wine barrels introduces a complex intersection of sensory cues: the bourbon casks contribute smooth vanilla and charred oak, while the port influence imparts deep notes of dried plum and dark cherry. This collaboration with All In Brewing presents a rich, viscous texture where the aggressive roast is tempered by the vinous sweetness of the wine and the warming spirit character of the wood.
Appearance. Jet black and completely opaque (40+ SRM). It pours with a dense, dark tan head that exhibits moderate retention. Thick, oily legs are visible on the glass due to the high alcohol content and significant viscosity.
Aroma. High intensity and deeply complex. Dominant aromas of dark chocolate and roasted coffee beans are intertwined with the sweet, boozy fragrance of bourbon-soaked vanilla. Secondary layers reveal a rich, vinous port wine character with notes of raisins, figs, and black currants. A distinct charred oak presence and noticeable but smooth alcohol warmth round out the bouquet.
Taste. The initial impression is an explosion of intense dark malt, featuring layers of cocoa, black licorice, and roasted grain. Mid-palate, the barrel aging takes center stage, offering flavors of toffee and vanilla from the bourbon barrels alongside a jammy, dark fruit sweetness from the port barrels. Bitterness is firm and assertive, effectively balancing the residual malt sugars. The finish is long and warming with a lingering bittersweet chocolate and vinous aftertaste.
Mouthfeel. Full and very viscous with a chewy, velvety mouthfeel. Carbonation is low to moderate, enhancing the luscious texture. A significant, smooth alcohol warmth is present throughout, consistent with its high gravity, without being sharp or solventy.
