Crafted to celebrate the tenth anniversary of the Trappist monastery’s brewery, this Festbier offers an elevated take on the traditional Weissbier style. The sensory experience is defined by a vivid interplay of spicy clove and ripe banana esters, derived from the specialized weizen yeast. A substantial grist of malted wheat and Pilsner malt provides a soft, bready foundation with a hint of grainy sweetness. Despite its slightly higher 6% alcohol content, the beer remains exceptionally refreshing, featuring a fluffy, mousse-like texture and a spritzy, effervescent finish. Subtle floral hop notes linger briefly, rounding out this elegant and celebratory German wheat ale.
Appearance. Pours a deep gold with a brilliant haze from suspended yeast and wheat proteins; features a very thick, moussy, and long-lasting white head with excellent lacing.
Aroma. High intensity of banana esters and spicy clove phenols in a well-balanced presentation. Moderate bready and doughy wheat notes are supported by a light grainy-sweet malt presence and a very low, clean floral hop character.
Taste. Initial impression of soft, bready wheat followed quickly by moderate banana and clove flavors. Low bitterness allows the grainy-sweet Pilsner malt character to shine, though the finish remains relatively dry and clean. Very low spicy hop flavor emerges toward the end, ensuring a well-rounded and flavorful palate.
Mouthfeel. Medium body with a characteristic fluffy, creamy fullness. High carbonation creates an effervescent, spritzy sensation on the tongue. Features a light, well-integrated alcohol warmth given its festive 6% ABV.
