The wild fermentation introduces a complex acidity and a delicate funk that dries out the finish. At 7.2% ABV, it carries a sophisticated presence, balancing sharp berry acidity against a soft, wheat-inflected malt base. Appearance. Deep ruby-magenta to vibrant purple hue with a slight hazy opacity. The head is a delicate pinkish-white with moderate retention, eventually settling into a thin collar with light lacing.
Aroma. High intensity aromatics of freshly crushed raspberries and blueberries dominate. Beneath the fruit, Huell Melon hops offer light notes of honeydew and strawberry. A clean lactic sourness is present, accompanied by subtle earthy funk and a light, crackery malt background.
Taste. Initial burst of tart raspberry and sweet-tangy blueberry. The acidity is firm but bright, enhancing the fruit flavors without becoming harsh. Huell Melon hops add a mid-palate smoothness with suggestions of ripe melon. Fermentation is very dry; the finish is crisp and clean with a lingering berry skin astringency. Bitterness is low, serving only to balance the fruit's natural sweetness.
Mouthfeel. Medium-light body with high, prickly carbonation that lifts the fruit acids. A faint, pleasant alcohol warmth is perceptible given the 7.2% ABV. Low astringency from fruit tannins provides a structured, dry mouthfeel.
