This Double IPA showcases a vibrant modern hop profile driven by the combination of HBC 431 and Sabro. The sensory experience opens with an intense bouquet of tropical fruit and distinct fresh coconut, accented by playful bubblegum esters from the fermentation. On the palate, the high hop intensity delivers layers of melon and stone fruit, supported by a neutral, grainy malt backbone that ensures a clean, dry finish. The 8% ABV provides a well-integrated, smooth warmth that complements the firm bitterness. A lingering coconut aftertaste serves as a signature of the Sabro hops, creating a complex yet highly drinkable strong ale.

Appearance. Pale gold to light orange-copper (7-9 SRM). Pours with a moderate-sized, persistent, off-white head with good lacing. Clarity is generally good, though a slight hop haze may be present.

Aroma. Intense hop aroma dominated by tropical fruit, pineapple, and a distinctive creamy coconut character from the Sabro hops. Subtle herbal, earthy, and berry notes from the HBC 431 provide depth. Low, clean, neutral maltiness supports a moderate bubblegum ester profile and a soft, clean alcohol presence.

Taste. Initial hop-forward impression of tropical punch and melon, quickly followed by a prominent fresh coconut flavor. The malt is low and unobtrusive, providing a soft bready foundation for the moderately high bitterness. Fermentation esters add a sweet bubblegum note that balances the firm hop bite. The finish is medium-dry and clean, with a lingering coconut and resinous hop aftertaste.

Mouthfeel. Medium-bodied with a smooth, velvety texture. Carbonation is medium-high, providing a crisp edge. A noticeable but smooth alcohol warmth is present without being solventy. No harsh hop-derived astringency.
